This Golden Raisin Coleslaw adds some depth and color to the classic southern side with shredded carrots, lots of herbs, and little bursts of sweetness from the raisins. They really help nullify some of the bitterness from the cabbage, for those of you who aren’t fond of the flavor. This coleslaw goes a long way served as a condiment or with another side dish but can be combined with your protein of choice for a complete meal for roughly four people.
It will keep for several days in the fridge before going soggy and the veggies and dressing can be prepped ahead of time and kept separate until the day of serving if needed.
Health Benefits of Raisin
Why just stick to almonds and walnuts, when you can get a whole lot of goodness from raisins too? Here’s why you should go for this healthy snack.
1. It might also help with cancer
Raisins provide anticarcinogenic benefits, because of the presence of catechins. Catechins have polyphenol compounds that possess antioxidant compounds known to curb the formation of cancerous tumors.
2. It helps to keep your BP in check
Stress and our eating habits can lead to fluctuations in our blood pressure. And this is not a good sign. But thank god, raisins have a solution for this too.
Raisins have high potassium content, and potassium is a natural vasodilator that relaxes our blood vessels, improves blood circulation, and thus provides relief from hypertension.
3. Raisins also enhance immunity
Thanks to covid-19, immunity has become of utmost importance in everyone’s life. When it comes to raisins, they have essential nutrients like vitamins and minerals as well as other compounds, such as antioxidants and polyphenols.
All these help in fighting with free radicals in our system, stabilizing them, and preventing them from causing oxidative damage to our cells including the white blood cells that form the backbone of our immune system.
